Whether it’s curling up with a good book, attending a virtual yoga class, or indulging in a chocolatey homemade dessert, it’s important to treat yourself to something you enjoy.
Just in time for the spring long weekend, Allison from Cook. Eat. Repeat. shared her favourite easy chocolate dessert recipes using a few ingredients you can probably find in your pantry right now. Easy Chocolate Dessert Recipes
From pantry granola to no-bake chocolate bark, whipping up a chocolatey treat is easy with recipes that only require a few basic ingredients to pull off. Bonus: they’re a fun and easy activity to do with kids!
Granola, 2 Ways
Option A: Goodfood Breakfast Oat Bowl Granola
Crunchy, delicious, and good for you, this take on granola features a protein-packed Goodfood Breakfast Oat Bowl (now available as an add-on to your basket).
Ingredients:
• 1 package Goodfood Breakfast Oat Bowl • 1 tsp honey • 2 tbsp coconut oil • ½ Goodfood Dark Chocolate Bar, chopped • 2 tbsp maple syrup
Steps:• Combine maple syrup, honey, and oil in a microwave-safe bowl. Microwave on high in 30-second increments until the oil is fully melted. Stir to combine.
• Toss the contents of one Goodfood Oat Bowl with the oil and maple mixture.
• Place on a parchment-lined baking sheet and bake at 325F for 20 minutes, or until golden.
• Remove from oven and sprinkle with chocolate pieces.
• Allow to cool fully before breaking into pieces and enjoying!
Option B: Pantry Granola
This take on do-it-yourself granola features items you probably already have on hand: nuts, seeds, dried fruit, and salty snacks.
Ingredients:
• 2 cups oats • ¼ cup maple syrup • 1 tsp cinnamon • 2 tbsp honey • ¼ cup coconut oil • 1 Goodfood Dark Chocolate Bar, chopped • 1 cup pantry add-ins (nuts, seeds, shredded coconut, dried fruits, etc.)
Steps:• Combine maple syrup, honey, and oil in a microwave-safe bowl. Microwave on high in 30-second increments until the oil is fully melted. Stir to combine.
• Toss oats, cinnamon, and add-ins together in a large bowl and coat with oil mixture.
• Place on a parchment-lined baking sheet and bake at 320F for 25 minutes, or until golden.
• Remove from oven and sprinkle with chocolate pieces.
• Allow to cool fully before breaking into pieces and enjoying!
Flourless Peanut Butter and Chocolate Chunk Cookies
These flourless peanut butter cookies are ooey, gooey, and perfectly chewy. The dark chocolate chunks take these peanut butter delights from grade-school snacks to decadent after-dinner desserts.
Ingredients:
• 190g Goodfood Peanut Butter (about ¾ cup) • 1 tsp baking soda • 150g brown sugar (about ¾ cup) • 1 Goodfood Dark Chocolate Bar, chopped • 1 large egg, beaten
Steps:• Using a fork, combine sugar and egg in a medium-sized mixing bowl.
• Add peanut butter and baking soda and combine. Mixture may become oily, but do not overmix.
• Add chocolate pieces and stir to combine.
• Scoop rounds of dough onto a parchment-lined baking sheet, making sure they are spread at least an inch or two apart.
• Bake immediately in 350F oven for 11 mins, until edges begin to brown.
• Remove from oven and cool completely before enjoying!
No-bake Chocolate Bark
The secret ingredient to next-level chocolate bark? After Dark — a 70% cocoa dark chocolate bar and recent addition to our grocery essentials selection. This chocolate dessert is so easy to make you don’t even have to bake it!
Ingredients:
• 500g Goodfood Chocolate Bars, chopped
(I used half dark, half milk)• 1 cup add-ins (I used Goodfood’s Salty Snack Mix)
Steps:• In a microwave-safe bowl, melt chocolate in 30-second increments, stirring each time. [Note: melt milk and dark chocolate in separate bowls as they do not melt at the same rate]
• Stir chocolate together, if using two kinds.
• Pour melted chocolate onto a parchment-lined baking sheet and spread out evenly using an offset spatula or a butter knife.
• Sprinkle with desired add-ins.
• Allow to fully cool at room temp for about 2 hours (to speed up the process, you can place the tray in the freezer for about 10 minutes).
• Break into pieces and enjoy!
