Want to turn prep work into a pleasurable experience? For goodness’ sake, get a good quality knife! A chef’s knife is versatile enough to handle almost any cutting task, from mincing delicate herbs to cutting through meat. With a sharp blade and a comfortable handle, you’ll know you have a great knife in your grip when you feel it virtually disappear into an extension of your hand.
Size
While professional chefs wield 12-inch blades with abandon, home cooks tend to be more comfortable with a blade that’s around 8 inches in length. Residential kitchen counters and non-industrial cutting boards weren’t made to handle anything much bigger than that.
Forged vs Stamped
Stamped blades are usually thinner and made of cheaper steel, while forged blades are heavier, more durable, and easier to sharpen. More often than not, you’ll want to avoid stamped blades when looking for quality (the knife sets sold for $10 at Walmart are definitely stamped blades).
